Saturday Morning Run

         6 am run to start the day. I ran my first race 10 years ago. It's been quite a journey to get to where I am now. Happy to share my running journey with you this morning Vj!  To many more miles of fun, laughter, and mental toughness!

We did it! 9.5 or 10 miles doesn't matter. We are done!

Morning Run

Today's 6 miler sunrise. It was a beauty this morning! The weather is starting to change. You can feel fall coming right around the corner.  It was still a little warm out there, but looking forward to the cooler temps in the next few weeks. I'll be posting my full marathon training recap so far this weekend so be on the lookout for that post. I'm in week 12/18 with 44 days left. The countdown begins! In addition to my training recap, I'll also talk about recovery and marathon fuel as a plant based runner. Have a great weekend!

Overnight Coconut Blueberry Chia Seed Pudding

Made with 5 simple ingredients.
✔️1/3 cup chia seeds
✔️1 can of organic coconut milk 
✔️1/4 cup of agave
✔️ 1 pinch of cinnamon
✔️ blueberries

First put the coconut milk, agave, and cinnamon into a blender (Vitamix works best). Blend until smooth.  Next pour the mixture into a tall mason jar.  Then stir in the chia seeds.  Refrigerate overnight.  Scoop out a portion for yourself, top with fresh blueberries, and coconut.  Enjoy!
