Raw Food Mondays

So I've been thinking...Why not try Raw Food Mondays? Starting tomorrow, I'm going raw one day a week. Here is the menu:
Breakfast-Banana
Lunch-Organic romaine with beets, mushrooms, carrots, cucumber, flax seeds in a raw tomato provencal dressing.
Fresh Fruit-strawberries, apple, raspberries, and pineapple
Snack-apple or Larabar
Post Run-Raw Blueberry Smoothie from Ani's Raw Food Kitchen
Dinner-??

Any ideas for dinner?

  1. hmmm how about SPRING ROLLS!!

    Avocado, seasonal fruit, carrots, cucumbers, tomatoes, beets, sprouts &
    fresh herbs wrapped in blanched collard greens. Served with
    Thai coconut-almond butter dipping sauce & coleslaw

  2. Thanks for the suggestion Betty. I ended up making a pate recipe from my raw food cookbook. It was pretty tasty. Can't wait for the world wide vegan bake sale at Mooshoes:) I think I'm going to make raw date cookies.
